Hiver 2011/2012 #29

After getting the 2.5litres thermal magic cooker in 2010 (as mentioned here), I bought its 5litres version during my last trip back home because it is so easy to use, so energy-saving, and simply because I am a glutton - I love to see a lot of food laid out in front of my eyes, hence, a bigger one is needed.

I haven't got the time to use it until today.

Five Spice Braised Pork Belly with tofu, beancurd puffs, hard boiled eggs and lean-cut pork.

It may not be the best looking dish, but it tastes so good with a plain bowl of rice, especially during winter.
I'm going to bring some of these for my lunch box on Monday, with some greens I bought from Chinatown today too. It has been some time since I brought my lunchbox to work.

Hiver 2011/2012 #5

My huge parcel from ♥home♥ finally arrived 1.5 weeks ago, just in time for X'mas.


Sauce packs, spices, dried seafood, etc.

Finally, I can eat my braised pork belly with beancurd skin and hard boiled eggs very soon!!

"Kentucky" chicken tenders tonight. It was sheer luck that I discovered (last year when I brought these 2 different types of spices to try) combining these 2 packs will render fantastic results.

Seasoned the sliced chicken breasts with "Seah's Fried Chicken Spices" for 30 mins before dipping them into whipped egg whites and "Kentucky" spice powder.

I think it is obligatory to have an electric whisker for the whipped egg whites because it took me 4-5 mins to get the right texture at the highest speed while pressing onto the "turbo" button. I don't know how long it would have taken if one is doing it manually... Also, maybe, I'm really weak, but my arm was kind of aching while holding onto the electric whisker.

The result was really crispy and light (due to the introduction of the egg whites) chicken tenders while retaining the moisture of the meat. I studied the ingredients of the packs and think it would be quite easy to replicate them myself. I will try it in future and add in more chilli powder because I don't find the "spicy powder" spicy at all. 

Personally, I don't fancy fried food a lot because it always irritate my throat after that. Smelling the oily fumes while deep frying them didn't help either. However, it is worth the effort if you have someone in the family who likes it.

Mee Chiam Kueh & Muah Chee: Succeeded!

I did the Mee Chiam Kueh first. As usual, it was like walking into a chemistry lab, pinning the instructions I've written on the fridge and rehearsed a few times in my brains what I've got to do from the beginning till the end. With all the ingredients and utensils laid out in front of me in order of sequence, I got it right.



Everything made from scratch so that I can control the quality of every element. I like my Mee Chiam Kueh thin and crispy (I got them thin & crispy!!), this is the only challenge. The rest is simple.

It never hit me that these 2 appetisers are so easy since I can always get to eat it at a very cheap price at the hawker centres back in S'pore. Anyhow, I got my thrill when I knew I succeeded, moving onto my next "chemistry experiment". =)

Enjoying the Thunderstorm

Thunderstorms reigning this week. FM told me it was hailing last night. Imagine small pieces of ice falling down when it's supposed to be summer.

Anyway, FM and I went to Chinatown today and gosh! I was so happy to see all those familar green vegetables again!! Got baby kailan, chinese spinach, kangkong, chinese cabbage, puay leng, on top of lots of stuff and in the end the grocery bag was filled to the brim when I checked out at the cashier. I forgot there was nobody driving me, I tried to carry that heavy bag by switching from my left hand to the right (FM couldn't help me cos she has her load too), I felt so sorry for myself after a good 15mins and decided to get a taxi home.

The wind is still howling outside but I'm enjoying a whole big plate of kailan, egg drop tomatoes tofu soup topped with coriander (!! I love!!! this herb so much I keep smelling it!!) with a big bowl of rice. Hahaha!! =)

I realised I'm pretty anal about my cutlery. I must have my porcelain spoon and chopsticks, I dislike the metallic smell that comes with those regular metallic spoons and forks.

I'm thinking whether I should make muah chee or mee jiang kueh tomorrow. I shall let my mood decide when I wake up!

Back to playing Wii golf for now.

I completed so much stuff this long weekend. Tomorrow's Tuesday already and it means going back to office again. Not that I don't enjoy working but I prefer time with family and friends way more. I work hard, but I play harder.

I frequent the Japanese supermarket so much I accumulated a full page of their stamps for an immediate monetary reduction and when Mia and I went there on Sunday, they were having this 15% off everything on top of my discount!!

Well, basically I was just taking whatever that pleased me and my trolley was filled to the brim shortly after. From noodles, rice, fish cakes, sashimi, japanese bottled drinks, ice cream, snacks... Besides, nobody at home likes Japanese food except me, so all these are just to pamper my taste buds. Eating should be a pleasure anytime, especially at home.

Over the long weekend, I cooked some truly authentic Singapore delights too. My pics shall tell what I was playing in the kitchen. Cooking is really just some very interesting chemistry experiments!!



The laksa I cooked here deserves its own cover story, seriously!



Bak Kut Teh
(which I painstakingly simmer under low fire for hours.)



Bak kut teh (Hokkien: 肉骨茶) is a Chinese soup popularly served in Malaysia, Singapore, China, Taiwan (where there is a predominant Hoklo and Teochew community) and also, cities of neighbouring countries like Batam of Indonesia and Hat Yai of Thailand. The name literally translates as "meat bone tea", and, at its simplest, consists of meaty pork ribs in a complex broth of herbs and spices (including star anise, cinnamon, cloves, dang gui, fennel seeds and garlic), boiled together with pork bones for hours.

I prefer my bak kut teh black. Mainly because that was how it should be when I was eating it since I was a kid. The white version is the Teochew version.

Okonomiyaki!!


I couldn't find the seaweed garnish meant for okonomiyaki, gotta make do with spring onions, otherwise, fillings this time include prawns, octopus, cabbage, and bacon. W ate 2 big ones in one night. Being a picky eater he is, I supposed I can say it's really d.e.l.i.c.i.o.u.s.! What's even worth mentioning - it's my first time trying to do this from scratch. Hahaha!!

Frankly, I'm more interested in the process of all these experiments in the kitchen than the final task of eating it. We usually invite our friends over to share the food. I need my guinea pigs for some frank comments. LoL!!

I call my parents every weekend if I manage to make it before their bed time cos I'm not a morning person since I was a kid. Waking up at 11a.m. is early for me. Anyway, my father don't sleep early too. Now that I can call for free, I just pick up the phone whenever I feel like it. I don't really have anything in particular to talk about sometimes but I just feel happy when I hear their voices. =)

As far as our relationship goes, we can say or comment anything to each other but we won't take it in the bad way. However, only I can talk to them like this and only I can "bully" them. If other people try to do that, whoever relative you are, neither will I appreicate it nor will I think you mean it for the greater good, simply because I'm their child and their only daughter, not you. Period.

I'm really busy these few weeks. Met Jas today when she just landed in Paris this morning, I'm meeting her tmr again!! She brought me Yakun kaya & loads of Singapore goodies this time, again!! =)

Singapore Hainanese Chicken Rice in Paris

Singapore has the best Hainanese Chicken rice. Even better than those selling at Hainan. I'm lucky the Chinatown here is not too bad at all. They do import a few brands from Singapore and I found Yeo's Chicken Rice chilli sauce.

Coke Chicken

Using coke light with lemon for the marination. First time trying this out.


A dish to go with plain rice, with a lot of its sauce. =)
I was kicking up a storm in the kitchen during the long Easter holidays. Curry and bee hoon should always go together. They really complement each other well. At least, this has always been the case since I was a little girl. When there's nonya curry, the bee hoon should be not far away...



I swear the chicken wings in this pot are really tender to the extent, once your teeth touch those wings, it goes literally 脱骨而出。

Simplest Bento Ever - Crystal Jade Quality Congee

One of my fav food. William gave me a disgusted look when I first cooked it years ago. He said porridge are disgusting food and only the English eats them. (Such a typical statement coming from a French. Sheesh!!) This is not the English porridge equivalent!! Cooking it to such smooth consistency requires skills. He certainly doesn't know how to appreciate light and tasty food. I'll make sure my children will enjoy this as much as I do. It irks me big time if i see my kid/s eating burgers and fries or anything fried every other day.

It's just too bad I can't find the kind of fish slices I want. I'll prefer it much more than shredded chicken. Well, better than nothing.

As the weather turns warmer and warmer, my appetite gets lighter and lighter.
